Marco de Pollo

Marco de Pollo is a national championship plank diver. Guybrush meets him during his search for the Ultimate Insult on Jambalaya Island. A brilliant diver and swimmer, he used to get teased by the kids when he was younger. They would chant his name in an odd singsong sort of way. His infamous name was given to him by his father, Count Francisco Alvarez De Pollo, during his "lighter moments".
Guybrush must challenge and beat de Pollo in a plan diving competition to get the Golden Man trophy which becomes part of an Ultimate Insult talisman. Each of the three judges is looking for something different in the dive, but Marco is an excellent diver and consistently receives three perfect scores of ten. Guybrush must wear a dunce cap to minimize his splash, perform the proper moves during the dive, and bribe the red-headed judge in order to tie Marco and force a second dive.
In this special case Marco uses baby seal oil to make himself even more aerodynamic, earning an eleven out of ten from one of the judges and making him still unbeatable. Guybrush can sabotage him by putting a Schmear Whiz-covered mini-bagel into the lotion, which attracts seagulls that then attack Marco in his second dive. When Marco protests, Guybrush starts chanting 'Marco!' to which unknown voices reply 'Polo!', driving Marco mad. After he runs off screaming, he is never seen again.
Name
He is named after the famous explorer Marco Polo, allegedly one of the first Europeans to visit China.
Also, his name is a reference to the game "Marco Polo" usually played in a swimming pool. It is a form of tag but one where the "it" is blindfolded so he can't see those who he must tag. However, if he shouts "Marco" the other players must shout out "Polo", giving the one who is "it" a chance to sense where the players are.
At some point in their conversation, Guybrush calls him a chicken; pollo meaning "chicken" in Spanish.
